for making these DELIGHTFUL cookies possible. You see, I don't bake. I was going to try to come up with an excuse...but I've got nothin'. However, due to Scott's end-of-season (HELLS YEAH) and the arrival of Abby Chambers (SHOUT-OUT) I dusted off the baking sheets and fired up the oven (that is, if "firing-up" the oven is even possible). Yes, the RoughRiders employees and Chambers family are in for a real treat of EPIC, HIGH CALORIE proportions. Mmm mmm mmm...
I saw a version of these cookies on my beloved, Pinterest, and made some adjustments that seemed right for me: I give you (drum roll please)...S'more Stuffed Chocolate Chip Cookies!!!
That's right...build a s'more and wrap cookie dough around it...no lie. I used 2 of the giant cookie dough tubes. BTW, what's up with it saying "Chocolate Chip Flavored Cookies". Oh well, tastes good nevertheless. If you're a baker, you are most-likely mortified that I didn't bake from scratch. Here's the deal: this stuff is GOOD--embrace it.
I bought a box of graham crackers but only needed 1/4 of it. I used about 12 jumbo marshmallows (cut in half) and 5 bars of Hershey's chocolate (of which I may or may not have sampled).
Then I put the s'mores together...
and added a generously rounded tablespoon of cookie dough to the bottom and a generously rounded tablespoon to the top.
Then I molded it around the s'more until it formed a large ball. I learned that they should be placed on the cookie sheet FAR, FAR, FAR apart. My first batch was all touching. NOOOO! After that, I put 6 per sheet. These babies require personal space. Take it from me, don't push your luck.
And then they were ready for the oven...I preheated to 350 and baked each batch for 14 minutes or until tops and edges were golden brown. This is what they looked like in the oven...

and voila! All ready for gluttonous consumption. I used all (can you believe it?) of the cookie dough and ended up with 2 dozen VERY LARGE cookies.
Ready for the SURPRISE?!? I only ate ONE. I can almost guarantee you that you won't be able to overeat these guys. Don't worry, I'm not one of those people that says, "Ugh. I can't eat this...it's too rich." PU-LEASE. I love super sweet, super rich desserts (with a tall glass of icy cold milk) but this one's a DOOZY...for reals. Enjoy!
